A ratatouille tart

My ratatouille tart recipe inspired by the Pixar movie:

Inspired by the famous "ratatouille" from the Pixar movie Ratatouille, I've made a tart that tastes just like summer in the south of France.
It's a very easy recipe to make but looks special enough to be a centrepiece at a summer party. Serve it hot or cold, on its own or with a mustardy leafy salad.

Ingredients:


Ratatouille sauce:
- 1 Onion
- 2 Peppers
- 2 Tomatoes
- 3 Cloves of garlic
- 3 Sprigs of thyme
- 1 Tbsp Herbes de Provence
- 1 Tbsp Tomato paste
- 50 mL Red Wine
- S&P
- EVOO

Tart Case:
- 1 Pack Puff pastry
- 30g Parmesan
- 1 Tbsp EVOO

Tart Topping:
- 1 Yellow courgette
- 1 Green courgette
- 1 Aubergine
- S&P
- EVOO
- 3 Sprigs of Thyme

Method:

1. Preheat the oven at 180 degC

2. Prepare the base sauce for the tart:
- Roughly chop the onion, garlic, peppers and tomatoes
- Add 1 Tbsp of olive oil to a saucepan on medium heat
- Start by sweating off the onion for a few minutes, then add the garlic and keep on the
heat for 1 min
- Add the peppers and sweat them off for a couple of minutes
- Add 1 Tbsp of tomato paste, cook it off for a minute then add a pinch of salt & pepper, 1
Tbsp herbes de provence, 3 sprigs of thyme and stir it all up for a minute on the heat
- Deglaze by adding the red wine and let it evaporate for a couple of minutes
- Add the tomatoes and cook that off on a low heat until the water from the tomatoes and
the wine has evaporated off (approx 20 mins)
- Blend the sauce until smooth


3. Oil a tart tin and unroll the puff pastry on top, cover with parchment and fill with baking beans (or rice)

4. Cook the puff pastry in the oven at 180degC for 20 minutes, then remove the baking beans and parchment paper, cover the base with parmesan and put back in the oven for 10 mins

5. Slice the courgettes and aubergine into even 1/2cm thick rounds with a mandoline or knife and season them with EVOO, salt and pepper

6. Assemble the ratatouille tart:
- Layer the sauce on the puff pastry across the bottom and sides
- Arrange the courgette and aubergine slices on top by alternating colours ina circular
pattern until the entire tart is covered
- Top with a few sprigs of thyme

7. Place the tart in the oven for 20-25 mins or until the vegetables are cooked through

8. Serve and enjoy hot or cold!
