Vegan Cinnamon Palmier Puffs

Well this is it, I'm back at Uni now. It's going to take some adjusting, mostly because I use to rely on cheese and chocolate for comfort and that's no longer an option. But I'm slowly finding some vegan alternatives that don't require to much effort for those days where all you want (nay... need) is a chocolate cake or a cheese toastie.

And here's my first answer, may I introduce to you the sweet, crispy and spicy number I like to call a Cinnamon Palmier. It's basically puff pastry with cinnamon and sugar, easy yet impressive and satisfying. I rest my case.



 

Ingredients:

  • 1 roll of puff pastry (check for a vegan one, I used the Co-op one)

  • 2 tbsp vegan spread

  • 1 tbsp brown demerara sugar

  • 1 tsp caster sugar

  • 1+1/2 tsp cinnamon


 

Method:

  1. Roll out the puff pastry into a rectangle.

  2. Mix together the spread, sugar and cinnamon.

  3. Spread the mix onto the puff pastry leaving a 1cm spacing around the edges.

  4. Roll one of the shorter sides to the center, then roll the other side to the center so both of the rolls meet each other in the middle and come together like two otters floating on a river.

  5. Slice into 2.5cm palmiers.

  6. Dispose onto a baking sheet and sprinkle with sugar.

  7. Bake in the oven at 180°C for 15 minutes (until golden brown)
