Cinnamon Maple Quinoa Porridge

Do you ever have those weeks that are just so overwhelming that you just want to stay hidden under the covers of your bed watching F.R.I.E.N.D.S on Netflix?

Well that was my current state of mind this morning.

I'm sure it's just the readjustment period of going back to uni and the fact that it's my final year therefore everything seems very final and daunting. So, after realizing that this feeling wouldn't be permanent and I was very capable of achieving all I needed to today, I got out of bed.

But today very much called for an over the top and comforting breakfast, I needed something warm and sweet STAT.


 

Ingredients:

  • 1/2 Cup Quinoa Flakes

  • 1 Cup Coconut Milk

  • 1 tsp Ground Cinnamon

  • 2 tsp Maple Syrup

  • Toppings (coconut flakes, chia seeds, sunflower and sesame seeds, flaxseed, ground cinnamon)


 

Method:

  1. Mix the quinoa flakes, cinnamon, maple syrup and coconut milk in microwavable bowl.

  2. Cook in the microwave for 2 mins on full power.

  3. Go wild with toppings to make it look just how you like it. Anything that'll make you feel good, unless that's just me...
