Creamy, sweet and tart recipe for cherry season
Cherry and almond have an aroma compound in common which explains why they go together so well. This dip is great spread on toast, with french toast (eggy bread), on croissants or with a spoon.
Ingredients (serves 4):
150g cherries, de-pitted
1 lemon, juiced
1 tsp sugar
250g mascarpone
30g icing sugar
1/2 tsp vanilla paste
Flaked almonds for topping
Method for this cherry recipe:
Put all the ingredients in a food processor and blitz until smooth.
Serve on a dish with toasted flaked almonds sprinkled on top.
Spread on top of toast, croissants or brioche, or enjoy as is with a spoon. Bon appétit!
