French home cooking recipe: blanquette de poulet
Looking for an easy chicken recipe? Why not try this french home cooking classic, traditionally served with rice. A cosy stew of chicken breast cooked in a creamy mushroom sauce.

Ingredients (serves 2):
French blanquette de poulet recipe:
1 chicken breast
1 carrot
1 shallot
1/2 leek
150g mushroom
4 tsp creme fraiche
1 stock cube
25g salted butter
25g plain flour
Salt
Pepper
Method:
Peel the shallot.
Rinse the leeks and brush any dirt off the mushrooms and carrots with a dry sponge.
Dice the shallot and carrot and thinly slice the leek.
Dice the chicken breast and season with salt.
Brown the chicken in a deep saucepan with 1 Tbs vegetable oil, then remove from the pan. Then add the vegetables with salt and sweat them off on medium-low heat for 10 minutes.
Boil 500mL of water and stir in a stock cube.
Put the butter in the pan, and once melted add in the flour. Stir then add the chicken and stock before simmering for 20 minutes.
Add the creme fraiche and serve the blanquette de poulet with rice or pasta.
