If you're looking for beetroot recipes, this one should be on the list!
How to best describe this quiche? The pastry is short and crispy with a nutty flavour, the filling is smooth and creamy with a delicate sweetness and earthiness from beetroot and savouriness from the cheese. Then, as you bite into it you get different pockets of fresh basil, creamy goat's cheese and tender pickled beetroot. In my opinion, this is the perfect spring lunch , it's easy to make but also looks beautiful if you want to bring something to a family gathering.
You can use shop bought pastry of course, but I've included my pink shortcrust recipe in case you want to go all out.
